Sorry I hadn't had a chance to post my original weight but it was 225.6 when I started this...Guess I am doing ok cause I just weighed in and now I am at 223.2 so that is a weight loss of 2.4 pounds !! WHOO HOOO !!! Wanted to share !!!
Oh and before I go I FINALLY made something with my new blender thats YUMMYYYYYYYYY!!!!!!! I made cashew ice cream !! You have to try this wonderous stuff !
As some of you know my and son and I both are lactose intolerant however we give in to ice cream on occasion (and pay for it with gas and bloat and tummy aches!!) So today I made a cashew ice cream base and it is soooo good !!!!! (I wanted to drink it before it was frozen !! haha) I simply used soaked (over night) raw cashews about 1 cp I added 1 cp water and some vanilla extract and about 1/4 cp Raw agave necter (LOVE that stuff right from the bottle haha - gonna have to watch myself with agava haha) then I blended it up using the ice cream setting on my blendtec (made it smooth!!) I tasted it and it was DA BOMB!!! AWESOME !!! so now I am ever so (not) waiting patiently while it freezes in the ice cubes trays so I can then blend it to make it smooth (I really need an icream maker!!) I think sometime I may try using some berries in the cashew base minus the agave for like a straberry ice cream or something...yumm!!!! oh or banana blueberry!! OMG I won't be losing weight if I keep this up !! good thing I only make enough for ONE ice cube tray at a time !!!
OK NEXT I made almond milk I didn't need any swetener for it just almonds soaked over night (drain and rinsed a 3 times) 1 cup with 3 cups water blended in blendtec blender with oh maybe 1/8 tsp vanilla extract (get good vanilla extract or even better a vanilla bean!) and then just blend and then strain using cheese cloth (thats I have on hand) or you can use a nut milk bag if you have one ...it was FANTASTIC!!! I have had store bought almond milk but WOW nothing beats FRESH!!!! plus mine is less sweet than the store version and more vanilla tasting which I like better!! ok so then I took and some of the amond milk 1 cp and mixed in some raw cacoa powder and about 1 tsp agave for some chocolate milk AWESOME !!!!!!!!!! I left the rest I had made plain vanilla so I can add whatever want as I want it ....LOVE IT !!!
Later that day :
OK I blended up the frozen cashew cream ice cubes into ice cream !! it is AWESOME !!! However my son didn't like ..thats ok he likes his berry ice cream he made with frozen fruit so we at least may not have to resort to cows milk ice cream anymore!! We have both found something we like !!! YIPPEE !!!
I also made up some flax crackers(1st time making them)..
I took 1 cp flax and ground it in my coffee grinder and added water to cover and let it sit ....I also then took WHOLE flax and added water and allowed it to soak ...I waited about an hour til they were gooey...I then added some spices - italian blend with some papricka and to the other i added garlic etc I also added the left over almond milk pulp (hate to waste anything !) and some veggie juice pulp I had saved....I spread it out in dehydrator set at 105 degrees F and waited 12 hours then flipped and waited another 12 hours and they were ready!! They are GREAT!! I love them!!! great to crush over a salad or eat with a dip !!!! I never knew eating so healthy would taste SOOOO GOOD!!!
Now am onto CASHEW CHEESE!!! (I LOVE cheese!!)So hope this turns out as well!!!
